Our Kyoto duck is sourced directly from carefully selected producers in Kyoto — something you won't find anywhere else but KASSAI. The natural sweetness of the fat and the savory depth of the meat come together beautifully with the shoyu broth.
The broth is a refined "clear style" (tanrei-kei), slow-simmered from duck carcasses over many hours. Every trace of bitterness has been removed, leaving a broth that is both light enough to drink to the last drop and remarkably complex. No pork bone or pork of any kind is used.
Duck chashu tops the bowl — the tender, lightly seared duck melts into the delicate shoyu broth for a perfect harmony with every bite.
